So instead, I fried some green ones for supper. They tasted like summer. BIG TIP. The trick is to seal the batter. First dip each slice in flour, then egg, and back in seasoned flour again. Then let them dry on a bakers rack. I give each piece one more shake in flour before they go into my little fry daddy. Golden brown and absolutely not greasy at all, they are moist and so delicious. The dipping sauce is made from backyard herbs, a red pepper, a little horseradish, sour cream, mayo and garlic. Food process this and store it in a squirt bottle as a finisher for all kinds of summer salads.
